This is a French inspired bread. There are many different ways to make this bread but we make it in a similar way as the Alentejano bread. We ferment part of the dough for 24 hours and allow it to grow slowly.
It is a great bread for sandwiches and also for cooking. You can slice it and put mashed avocado, tomatoes on top with a drizzle of olive oil, salt and pepper. It is a great appetizer for any dinner table.
